Bronte’s Rocket, Radicchio and Pear Salad

Plenty of fresh and delicious ingredients all tossed into one sweet and spicy garden of goodness in this number. This one has been created by Brontë, our Head Barister!

Ingredients

 Drizzle of EVOO (Mount Moriac’s Tuscan blend is lovely…)

1/2 a head of Radicchio

Half a 150g bag of Rocket (available at our Food Hub Markets)

1 small bunch of Radish (we have Watermelon & Cherry Belle available at the moment)

1 Apple or Pear

1 cup of Walnuts

1 whole Lemon (Cindy’s meyer lemons from our Food Hub Markets)

1 teaspoon of Honey (preferably Wariwillah’s local as local honey!)

1 teaspoon of Dijon Mustard

Parmesan Cheese/Parmigiano reggiano

 

Method 

Step 1:

Preheat oven to 180C and toast walnuts until golden brown, then set aside to cool.

Step 2:

Place a good glug of olive oil in a cup with a squeeze of honey, another good squeeze of lemon and a decent amount of Dijon mustard. Whisk with a fork until combined.

Step 3:

Place honey in a pan on the stove with walnuts and caramelise.

Step 4:

Place radicchio leaves and rocket in a bowl with the choice of apple or pear thinly sliced. I also added radish from the Common Ground Veg Box for extra crunch.

Step 5:

Add the caramelised walnuts, Parmesan and the dressing in and combine.

Enjoy with a glass of wine, good conversation and plenty of other yummy side dishes!
