After a heavy fall of late winter rain, spring is officially here! Simon and Kelsie have been hard at work planning for the busy season ahead and can’t wait to showcase the best that spring has to offer.

Recipe Inspiration:
Our chef’s have the perfect recipe for a Roasted Beet, Fennel and Mandarin salad, showcasing the best of our seasonal farmer’s box…
From your box:
2 x mandarins (cut into segments)
1 x bunch of beets (washed, including chopped tops)
1 x fennel bulb (washed, including chopped fronds)
1/2 x bunch coriander (washed)
1/2 x bunch mint (washed)
1/2 bag of spring salad mix (washed)
Juice of 1/2 a lemon
Method:
Preheat your oven to 180 degrees
Cut half of the beets into chunks, toss with olive oil, salt and pepper and roast for 20/25 mins
Mandolin/finely slice the remaining beets and fennel and add to a bowl with the salad leaves, fennel fronds, herbs, beet tops and mandarin segments
Add in your roasted beets and toss through
To dress, simply combine the lemon juice with two tablespoons of good quality olive oil add salt and pepper to taste, shake well and drizzle over your salad
Add in some goats cheese/cashew fetta for creaminess and some chopped hazelnuts/walnuts for crunch!
